Traditional Fruit Cake Recipe
Dry fruits and nuts - 250 g
Plain flour - 250 g
Caster Sugar (Fine powdered sugar) - 250 g
Ghee - 200 g
Butter - 50 g
Eggs - 250 g
Finely powdered cinnamon and cloves - 1/2 Tsp
Brandy/Rum - 1/2 glass
Sugar for making caramel - 4 TspAtleast 1 week before making cake, prepare fruit mix by soaking fruits and nuts in brandy/rum. Make caramel by melting sugar in a pan and add to the fruit mix. Keep this fruit mix for atleast 1 week.
To make the cake:
Beat butter, ghee and eggs well using a blender. Add the caster sugar or sugar powder and beat again well. Now add the flour and make in to smooth batter.
Add the powdered spices. Mix well. Now add the fruit mixture to the batter and mix well. Coat the cake pan with butter and line the inside of the cake pan with oil paper. Now add the whole mix to a suitable cake pan.
Preheat the oven to 160 degree. Place the cake pan in the oven and bake for 1 hour by heating from below. At about 45 mins do check the cake to see if its baking properly and to adjust the settings of the oven if needed.
