Karimeen Pollichathu
Ingredients:
Karimeen - 1 kg
Red chilly powder - 2 teaspoon
Coriander powder - 1/2 teaspoon
Pepper powder - 1/2 teaspoon
Turmeric powder - 1/2 teaspoon
Ginger - 1 piece
Garlic - 6
Green Chilly - 2
Shallots - 1/2 cup
Big Onion sliced - 1
Tomato - 1
Salt - to taste
Directions:
Clean Karimeen and marinate it with chilly powder, pepper powder, turmeric powder and salt. Keep some masala aside. Fry the fish in oil. Do not fry too much. Make a paste of ginger, garlic, green chilly, shallots and onions by grinding them. Next take some oil in a pan and pop mustard seeds. Add green chilly, ginger and garlic and saute for sometime. Then put the fried fish in this and cover it with the masala. Place the fish and masala in a plantain leaf and cover it. Likewise do with all the fried fishes. Again heat some oil in another pan. Place each leaves on this pan. Cover it with a lid and allow it to get cooked. Turn over the fish at times. Remove from flame when it is done.
