A highly nutritious leaf curry.
Ingredients
Amaranth(Cheera) - 225 gm
Coconut - 115 gm
Red onions - 1 bulb
Garlic - 2 flakes
Green Chillies - 5
Split Bengal Gram - 1 tsp
Oil - 15 ml
Salt - to taste

Directions
Wash and drain Amaranth leaves.
Grate coconut fine.
Grind onion and garlic fine. Crush the green chillies well. Add coconut and mix well while grinding.
Chop leaves into fine pieces.
Heat oil. Add black gram. When grams become brown, add chopped leaves and saute for 2-3 minutes.
Add salt and ground ingredients. Cover and cook for 5 minutes. Mix well on fire.
Remove from fire and serve hot.
Tip
1. Stems of the leaves can be used if they are very tender.
2. A variety of edible leaves can be prepared in the same way.
